Dinner Tonight: White Chicken Chili


Finally! This meal has been on the menu plan every week for about a month but keeps getting pushed back. It's a shame too because it turned out pretty well. I didn't have enough green chilis (used them last week for the chicken quesadillas and didn't bother buying another can) but it was still good. The chipotle chili powder is so spicy - I only used a teaspoon but that stuff packs a major punch!
I love regular red chili but this chili is a nice change on occasion. I serve with Jiffy corn muffin mix made as cornbread. Sometimes I add cheese/green chilis to the cornbread but decided to go without this time.

White Chicken Chili

3/4 lb chicken, cut into bite-size cubes
2 Tbsp olive oil
Salt, pepper & garlic powder
1 small onion, minced fine
2 cloves garlic, minced fine
1 small can diced green chilis
1/2-1 tsp chipotle chili powder
1 tsp cumin
1 tsp dried oregano
1 can Great Northern beans, undrained
1 cup chicken stock (or more, depending on how soupy you like your chili)
Grated cheese (optional)

Season chicken with salt, pepper & garlic powder (Paul Dean calls this "house seasoning" - little did I know that my house had so much in common with hers since this is what I've always used on everything). Saute in 1 Tbsp olive oil until brown. Remove from pan and add remaining 1 Tbsp of oil, onions and garlic. (Sidebar: I chop my veggies in the food processor so they will be tiny and almost indiscernable in the chili - hubby likes the flavor of onions but would rather not know they are there) Saute 2-3 minutes until softened. Add spices and green chilis and cook for another couple of minutes. Add beans and stock and simmer for 10-15 minutes to thicken and allow flavors to combine.
Top with grated cheese or your favorite chili toppings (green onion would be great here, or some sour cream to offset some of the heat).
